MPM: Copy Cat Panera “Classic Salad”

One of my favorite salads in the world is the classic salad from Panera.  It’s simple, super healthy, and the dressing is to die for.  So, I made my own copy cat version of it, with an addition of some fresh berries, for my two upcoming long work days.

Typically, I use whatever dinner leftovers I have as part of my work meal prep, but since I drank a hefty amount of vodka yesterday with some friends, I decided to be lazy today.  I’ve paired some homemade salmon salad with this classic salad, and of course accompanied by some chocolate ;).

Boiled eggs are an absolute must in my house and I always have at least 1 dozen eggs in the refrigerator at all times.  Unfortunately, my husband loves boiled eggs a little too much, so you’ll often find me muttering obscenities under my breath as I go to pack my lunch at 5:30 AM and realize I’m short an egg.

With that said, there are no excuses not to be able to meal prep!  This took me a quick 5 minutes to put together and I’ve got really yummy meals for the next two days.  Hoping you all enjoy and please let me know what you think!

My salmon salad
– 1 can organic, wild-caught salmon mixed with 2 tbsp of organic spicy brown mustard, topped with Old Bay seasoning to taste.

Classic salad copy-cat style
– Big handful of organic spring and romaine mix, topped with chopped red onion, strawberries, cucumbers, and blueberries.  I used a yogurt-based balsamic dressing from Publix (contains less fat/sugar than regular balsamic vinaigrette).
